PANEER is a fresh cheese used extensively in vegetarian Indian cooking. You should be able to find it in a big supermarket.
It carries flavours very well and the texture is fantastic.
If you are unable to find it, then use Halloumi, the Greek version.
Ingredients
50g/2oz semolina
200g/7oz paneer, cut into 1cm/½ in cubes vegetable oil, for shallow frying
small handful coriander leaves, finely chopped, to garnish
1 tsp lemon juice
Method
1. Place the semolina in a large bowl.
2. Place the cubed paneer into the bowl and coat well with the semolina.
3. Fry until crisp and golden.
4. To serve, garnish with coriander and squeeze over the lemon juice. Serve with salad for a tasty treat.
