Recipe: Caesar Bites

THESE portions of Chicken Caesar Salad can be scooped up and eaten as a finger or buffet food so are the perfect size for little hands. There is no cooking involved if you use left-over chicken or buy a pack ready cooked.

Ingredients

1 baby gem lettuce

1 cooked chicken breast

Caesar dressing

Handful of grated parmesan cheese

Method

1. Shred the chicken breast with fingers until stringy.

2. Mix in a dollop of Caesar dressing and a little bit of parmesan.

3. Break off each baby gem lettuce leaf at the root, wash and air dry.

4. Place chicken mix into a baby gem leaf.
