Recipe: Spanish Tater-Cakes

CHILDREN love mashed potatoes and this one is an easy spicy variation on a store cupboard theme. Serve them with a salad to count towards their five daily portions of fruit and vegetables.

INGREDIENTS

2 cups leftover mashed potatoes

2 tbsp flour

1 egg

Butter

½ cup diced chorizo sausage

METHOD

1. Mix the first three ingredients together.

2. Make into burger-sized patties and fry in butter until golden brown on each side.

3. Serve warm with a salad and tomato ketchup or mayonnaise.
