THIS delicious summer pudding recipe is inspired by the strawberry-and-cream dessert traditionally served at Eton College on June 4 and is really called Eton Mess. It uses red summer berries and broken pieces of meringue so children don’t need to worry about it looking perfect. The meringue nests are inexpensive and can be bought pre-made from any supermarket.
Ingredients (Makes 4)
2-3 meringue nests
1 punnet of raspberries
Half a punnet of strawberries, quartered
Half litre of double cream
2 tsps sugar
4 sundae Glasses
Raspberry or chocolate sauce
Method
1. Using an electric mixer, place the cream in a mixing bowl and whip it until almost firm, adding a couple of teaspoons of sugar for taste.
2. For colour, add a few raspberries to the cream and stir in with a spoon. Now break three meringue nests into small pieces (about the size of chocolate buttons) and add them to the cream mix.
3. Squirt a little raspberry or chocolate sauce (for a messier effect) in the bottom and around the inside of each glass.
4. Place five raspberries in the bottom of each glass, then dollop the cream mixture in, filling the glass about half way.
5. Now add a layer of sliced strawberries, followed by another dollop of the cream mixture, finishing near the top of the glass.
6. Decorate the top with some quartered strawberries around the rim, a little sauce and a raspberry in the middle.
