THIS salad is both tasty and good for you. Although an adult will need to do the chopping, kids will have fun mixing the mayonnaise and turmeric together to make it a nice bright yellow.
Ingredients (serves 2)
8-10 boiled salad potatoes
1 bunch chives
½tsp turmeric
Salt and black pepper
3tbsps mayonnaise
2 barbecued chicken drumsticks
Method
1. Cut the potatoes into bite size pieces and finely slice the chives.
2. In a mixing bowl, add ½ tsp turmeric to 3tbspf mayonnaise. Mix well together until it turns yellow.
3. Add the potato pieces until well covered in the mayonnaise mixture and salt and black pepper to taste.
4. Pile the potato and mayo mix into a serving dish and bury two chicken drumsticks, thin end up, in the middle. Sprinkle with chives to finish.
