Recipe: Mini Summer Fruits Cheesecakes

ANOTHER easy no-cook dessert recipe that kids will love to make and eat, using store cupboard ingredients and summer berries.

Ingredients (serves 4)

4 digestive biscuits

100g cream cheese

100ml double cream

50g butter

1 packet frozen summer berries, defrosted

4 ramekins (little bowls)

Method

1. Crush the digestive biscuits in a bowl and add melted butter, mixing so the crumbs are well covered.

2. Now share out the mixture into each of the bowls, pressing it down and smoothing it with the back of a spoon. This will become the cheesecake base.

3. Now beat the cream until it thickens a little and put the cream cheese into a bowl. Add the cream to the cream cheese and beat together until well mixed. Add the summer berries and stir well. 4. Share the mixture between the four bowls then place in a fridge for 30 minutes to set.
