Recipe: Lemon Syllabub

SYLLABUB is a traditional English dessert full of rich cream and infused with fruit flavours. This one has tangy zest of lemon threaded through it to offset the sweetness of the cream.

Ingredients (serves 2)

2 lemons
2 tbsps caster sugar
250ml double cream
3 tbsps hot water

Method

1. Using a zester or the smallest side of a grater, grate the peel of the lemon into a bowl (save a little bit for decoration later) adding sugar and then hot water.

2. Start to whip the cream with either an electric or hand whisk, pouring the lemon stock in gradually until the cream stiffens and starts to peak.

3. Share the mixture out evenly into two dessert glasses or Champagne flutes. Leave to cool in the fridge.

4. Top with some grated lemon zest before serving.
