A VERSION of bangers, beans and mash, this recipe uses sweet potato, chorizo and baked beans for a Mediterranean take on a dish that children love.
Ingredients (serves 2)
2 sweet potatoes (skins scrubbed)
50g Cheddar cheese (grated)
1 small piece of chorizo sausage
1 large can of Baked Beans
Method
1. Prick the potatoes with a fork several times and put in microwave cooking on high for eight minutes.
2. Ask a parent to remove the paper skin from the chorizo then cut it into 2cm chunks.
3. Put a frying pan on a moderate heat, add the chorizo, stirring until brown. Add the beans to the chorizo mix.
4. Put the cooked sweet potatoes on serving plates. Cut in half and pour the chorizo-bean mix on top.
5. Sprinkle with cheese and put under grill for a few minutes until cheese has melted, before serving.
