Recipe: Mini Ham and Tomato Pizza

THIS is a quick and easy snack using the sorts of ingredients that are likely to be in the fridge and kitchen cupboards anyway. The recipe toppings can be varied to include peppers, mushrooms or pepperoni slices.

Ingredients (Serves 1)

1 thick crust of sliced bread

100g of wafer thin ham

2 tomatoes

150g grated cheddar cheese

1 teaspoon dried basil

1 tablespoon tomato ketchup

Pinch of salt and black pepper

Method

1. Put the grill on to medium heat. Trim the edge of the crust a little so that it is square, then cut in half.

2. Coat each piece of bread with tomato ketchup and sprinkle with a little dried basil.

3. Cut the ham into shreds and place on top of the bread base, adding two slices of tomato on each slice. Cover with some grated cheese. Sprinkle a little salt and pepper over the top and grill on a medium grill until golden brown.
