PLANTAINS: A close relative of the banana, these are also yellow and similarly shaped but thicker and often cooked before eaten. It has a low glycaemic index and is good for slow energy release.

Moin-Moin: This savoury bean cake is popular in West African countries such as Nigeria, Ghana and Sierra Leone and is made from black eyed peas or other beans. It is easy to make and packed with protein.

Jerk Chicken: One of the best-known Caribbean dishes. Jerk is a style of cooking generally regarded as native to Jamaica in which meats like chicken, pork and beef are dry- rubbed with a fiery spice mixture.
