Tiny Bites recipe: Caprese salad

IT CAN be hard to get the little ones to eat salads, but this one is not too adventurous. It’s also colourful enough to grab their attention.

Caprese Salad

Ingredients (serves 1)

2 Vine tomatoes

1 ball mozzarella cheese

Green Pesto

Basil

Method

1. Collect all your equipment and ingredients before you start.

2. Remove the core from the tomato and being very careful use a knife to slice the tomato into six even slices .

3. Arrange the tomato slices evenly across a plate.

4. Tear the cheese into 12 even pieces and spread over tomatoes. Season to taste with salt and pepper.

5. Rip the basil leaves and scatter over the salad. Drizzle over the salad 1 dessert spoon of pesto.
