GETTING children to eat fish is not always easy, but chances are they will eat fish fingers.

Rather than shop bought ones, though, why not try making your own?

It’s easier than you think, and the cornflakes in this recipe make a much healthier alternative to traditional batter.

Cornflake Cod Goujons

Ingredients

1 cod fillet

100g cornflakes

2 eggs

100g flour

Method

1. Slice the cod into 2cm strips.

2. Beat the egg in a bowl and crush the cornflakes in a separate bowl.

3. Cover the cod strips in flour, then egg, then cornflakes.

4. Shallow fry for 7-10 minutes.

5. Serve with mushy peas and lemon and parsley mayonnaise.
