Cornflake Cod Goujons
Ingredients
1 cod fillet
100g cornflakes
2 eggs
100g flour
Method
1. Slice the cod into 2cm strips.
2. Beat the egg in a bowl and crush the cornflakes in a separate bowl.
3. Cover the cod strips in flour, then egg, then cornflakes.
4. Shallow fry for 7-10 minutes.
5. Serve with mushy peas and lemon and parsley mayonnaise.
