Popcorn chicken with homemade coleslaw
Ingredients
1 chicken breast
100g self-raising flour
4 dessert sp Cajun spice
1 egg
250ml milk
¼ small white cabbage
Small onion
1 carrot
Big dollop of mayonnaise
Method
1. For the coleslaw: Finely shred the cabbage, finely slice the onion and grate the carrot. Add the mayonnaise and mix together thoroughly.
2. For the chicken: Mix together the flour and cajun spice, in a separate bowl whisk together the egg and milk.
3. Dice the chicken breast into smallish pieces, dip into the flour mix, then the egg mix then back into the flour. Deep fry until golden, then take out and drain on kitchen roll.
4. Serve with salad as a meal or barbecue sauce as a snack.
