Stuffed Mushrooms and alioli
Ingredients
2 portabello mushrooms
200g cheddar cheese (grated)
Small red pepper (diced)
Sprig of rosemary
Olive oil
Mayonnaise
garlic puree
Method
1. Preheat oven Gas mark 6, rub the mushroom with a little olive oil, sprinkle with the rosemary, place on a tray stalk side up, cook in the centre of the oven for 10 mins. Take out and leave to cool.
2. For the alioli, mix the mayo with the garlic puree.
3. Mix the cheese and peppers together, pile on top of the mushrooms place the tray back in the oven for a further 10 mins.
4. Serve with a small salad and alioli.
