Rainbow cupcakes with fairy dust
For the cupcakes
200g self raising flour
Teaspoon baking powder
3 eggs (beaten)
200g caster sugar
200g margarine
Red, blue and yellow food colouring
For the topping
250g soft cream cheese
25g caster sugar
Edible glitter
Method
1. Pre-heat oven to 180 degrees.
2. Sieve the flour and baking powderŠ add sugar then eggs and margarine and mix till smooth.
3. Split the mixture into three bowls, add red food colouring to one, blue and yellow to the other two.
4. Layer the mixture into cupcake cases one colour at a time. Place on a tray in the centre of the ovenŠ for 18-20 minutes.
5. Mix the cream cheese and sugar together. When the cakes are cool, top with a spoonful of cheese mix and sprinkle with edible glitter.
