2.45pm: Grab a sneaky sandwich after the last of our guests leave, and read over our new £5,000 wedding package – a package specifically designed to allow newly-married couples and their guests (up to 100) to celebrate in style on a fixed budget. It’s been a great success so far.

3.15pm: I manage to con several members of staff in to helping me move our baby grand piano downstairs to the Ziba restaurant, in preparation for our Thursday evening live jazz and blues sessions. It’s straight after work, so we anticipate strong support.

4.30pm: David and Jane, our bride and groom, arrive and check into their room. They were married abroad, so their reception is at the Racquet Club. As with all our guests, but especially with family functions, sensitivity is essential. We walk through the first-floor function rooms. The ice sculpture and the band have also arrived, so we can all get an idea of where everything’s going.

6.30pm: Guests start to arrive – a little earlier than planned, but we start serving Champagne anyway. We have one of the city’s finest selections of wines and Champagne, everything is specially chosen by our own management.

12.30am: As the last half-hour approaches, I start to think about tomorrow. We’ve got a sit-down dinner for 80, which means we need to prep as soon as our last guests leave this evening. I have a great team here, so even though it’s late we get straight into it and have it done in no time.
