Colin Manning: Gathering the troops is just for starters

COLIN MANNING is director of award-winning city centre restaurant, 60 Hope Street. The venue is celebrating its tenth anniversary today.

Colin, 42, lives in Woolton and co-owns the restaurant with his brother, Gary.

This was Colin’s day:

6.30am:Awoken by eldest son getting ready for school. Up shower and shave, have breakfast and help get kids ready for school. As any parent knows, this can be the most stressful time of the day as you gather the troops for an on- time departure. My son leaves the house for the bus to school as soon as he is ready as the rest of the house is stirring.

8.30am:My wife, Holly, heads off to work and I drop off my youngest at nursery, and then take my other two daughters to school. Depending on the week’s proceedings, I will shoot to the gym for an hour or otherwise straight to work.

9.15am:Arrive at work and head across to the Quarter for my morning latté and maybe a sausage sandwich or a freshly baked croissant. I say hello to the team and catch up with several of our regulars who are there at that time every day. I then head over to our first restaurant, 60 Hope Street.

10am:Call at our latest eatery Host and check all is well and whether there is any menu or other changes for the day. Host is a pan-Asian style restaurant, the service style being inspired by mine and Gary’s travels around south east Asia, in particular Thailand, where we both travelled extensively.

11.30am:Stop for a snackette as staff lunch at 60 is served.

11.45am:Change into a freshly ironed shirt ready for our lunch service – lunches especially can suddenly get very busy when you least expect it. Quick last-minute check round before the doors open and it’s all systems go.
