Colin Manning: Gathering the troops is just for starters

3pm:If I am off in the evening, I will stay on and work, but if not I will generally leave the team at 60 to finish off lunch service and if I am feeling peckish I pop over to see head chef Ashley at Host to join them for a quick staff lunch. I then jump in the car to head home to catch up with Holly and the kids after school, as usually we go off in different directions to swimming, gym, karate or other extra -curricular activities.

6pm:I arrive back at 60 for the night and oversee the change for service. Being on Hope Street we have a lot of theatre-goers and they always like to eat on the street before they watch their show.

One of my favourite parts of what I do is watching people’s reactions when I meet and greet the customers at their table and then proceed to read out aloud the specials.

10.30pm:After last main course has gone, and all check-backs performed and received, I will nowadays, if I am at all peckish – which is usually the case – I will either order something to eat at 60 or order a take away form Host or the Quarter and head home.

11pm:Enjoy supper with a glass of wine or two, watch TV, unwind and relax.
