CELEBRITY chef Aiden Byrne is to open a new restaurant in Merseyside.

The Great British Menu finalist, who was the youngest chef ever to win a Michelin star, said he is “coming home” with the new restaurant, which will be called The British Grill.

It will open at the end of this month at the Craxton Wood Hotel, in Ledsham, which has recently undergone a major refurbishment.

The menu will be based around classic British dishes, served with a twist.

Last night, Byrne said diners can expect British favourites such as beer-battered Fleetwood scampi, along with some of his own classics, including Rose veal rack with wild mushrooms, broad beans, cocotte potatoes and white port cream sauce.

There will also be a selection of the chef’s signature sharing platters.

Kirkby-born Byrne, who made his name as head chef at the Dorchester, said: “It is about giving everyone the opportunity to taste really great food.

“We have created a contemporary and relaxed dining space and the food, although hearty, will be every bit as inventive as anything I have ever created.”

Byrne, 38, trained at the Knowsley Central Tertiary College, in Roby, and worked at Chester’s Grosvenor Hotel before moving to Adlard’s, in Norwich, where he was made head chef at the age of 21.

At 22, he became the youngest chef to win a Michelin star.

He received a second Michelin star at The Commons restaurant, in Dublin, before becoming head chef at The Grill at the Dorchester.

The British Grill will open its doors to the public on Friday July 29 after special launch events, and bookings are already being taken.
